| Chai tea a la Vasquez ¤ 4 servings, ¤ work time: about 3 minutes; cook time: approximately 7 minutes. This is super good and a creation from my own kitchen. This is highly addictive.
¤ main ingredients (makes two servings): 1) 2 cups of rice milk (plain, or vanilla), 2) ginger: about 1 tablespoon of chopped ginger or 1 teaspoon of ginger juice or powdered ginger, 3) 1 Tablespoon coconut butter, 4) jasmine tea: the amount in 1 tea bag, 5) cardamom: 1/8 teaspoon of whole or ground, 6) cinnamon: ¼ teaspoon ground or 2 inches of whole, 7) sweeten to taste with sugar or preferably honey,
¤ options to add: ?--2 teaspoons of freshly ground coffee; ?--black pepper--a mainstay of traditional chai, ?--a few of cloves: ½ teaspoon of ground cloves or 1 teaspoon of whole cloves.
¤ creation: 1) Place the rice milk into a pot and make it hot; boiling is unnecessary and undesirable, 2) Add the other ingredients. 3) After it is hot and everything has mixed for about 5 minutes, place it all in a blender; blend to homogenize for about 10 seconds, and then strain (with a wire mesh strainer) it into the cups. If you pre-grind the ginger, cinnamon, and cardamom, you could then simply strain it, but I find that blending it brings out more of the (whole) ginger and other flavors, and blending also allows the coconut butter to get integrated into the drink instead of floating on the top of the drink. 4) Drink and enjoy! Instant gratification is its own reward!
